Avocado Shrimp Toast
Are we looking for a quick breakfast that feels both fresh and satisfying? This avocado scrambled egg shrimp toast is a perfect choice.
It combines creamy avocado, soft and fluffy eggs, and tender shrimp on a warm slice of toast. The texture is rich but balanced, and the flavor feels light yet comforting.
This dish is ideal for busy mornings, a relaxed brunch, or even a light meal during the day. Let’s go step by step and make it easy for us to follow.

Ingredients We Need (1 Serving)

Here are the exact ingredients and amounts we will use:
- Toast: 1 slice
- Avocado: 1/2 (about 70–80 g)
- Shrimp: 5 pieces (about 80–100 g, peeled and cleaned)
- Egg: 1 large
- Coconut oil: 1 tablespoon (about 10 ml, divided use)
- Salt: 1/8 teaspoon
- Ground black pepper: 1/4 teaspoon
Optional (for extra freshness):
- A few drops of lemon juice

Step 1: Warm and Crisp the Toast

- We start by preheating the oven to 150°C (300°F). Place the slice of toast on the middle rack and heat it for about 2 minutes.
- This step gives the toast a slightly crispy outside while keeping the inside soft. If we prefer a softer texture, we can skip heating and use the toast directly.

Step 2: Prepare the Avocado Spread

- Cut the avocado in half and scoop out 1/2 into a bowl. Use a fork to mash it until smooth.
Add:
- 1/2 tablespoon coconut oil (about 5 ml)
- A pinch of salt (about 1/16 teaspoon)
- A small pinch of black pepper
- Mix everything well until creamy. If we like a brighter taste, we can add a few drops of lemon juice. Set it aside.

Step 3: Cook the Shrimp

- Heat a flat pan over medium heat and add 1/4 tablespoon coconut oil (about 2–3 ml).
- Place the shrimp into the pan in a single layer. Cook each side for about 1–1.5 minutes until they turn pink and slightly firm.
- Sprinkle a small pinch of black pepper during cooking. Once done, remove the shrimp from the pan and set aside.

Step 4: Make the Soft Scrambled Egg

- Break the egg into a bowl.
Add:
- Remaining salt (about 1/16 teaspoon)
- A pinch of black pepper
- Beat the mixture until evenly combined.
- Heat the pan again with the remaining coconut oil (about 1/4 tablespoon). Pour in the egg mixture.
- Gently stir using a spatula over low to medium heat. Cook for about 1–2 minutes until the eggs are soft and slightly creamy. Avoid overcooking to keep the texture smooth.

Step 5: Assemble the Toast

Now we bring everything together:
- Take the warm toast and spread the avocado mixture evenly across the surface.
- Add the soft scrambled eggs on top.
- Place the cooked shrimp evenly over the eggs.
Make sure each bite includes a bit of everything for the best flavor balance.

Helpful Tips for Better Taste

- Use ripe avocado for a smoother and creamier texture.
- Keep the heat moderate when cooking shrimp and eggs to avoid dryness.
- Serve immediately to enjoy the best texture and warmth.
- We can add sliced tomatoes or greens if we want more variety.
